The oyster size, called “calibre” is set
by French and European Regulation.
The calibre is defined by the oyster weight.
The calibre is given by “number”, from 0 to 5, for the rock oyster
the number 0 for the biggest oysters and
the number 5 for the smallest oysters.
For the Flat Oyster, the calibre is given by a code: HC (out of caliber),
TTC (very very big), TG (very big), G (big), M (medium), and P (small).
